Banana Walnut Bread
Ingredients:
2 cups flour 30 Nilla wafers, finely rolled (about 1 1/4 cups) 2 1/4 tsp. baking powder 1 tsp. salt 1/2 cup (1 stick) butter or margarine, softened 3/4 cup sugar 2 eggs 2 medium ripe bananas, mashed (about 1 cup) 1/2 cup milk 3/4 cup Planters walnuts, chopped, divided
Directions:
- Mix flour, wafer crumbs, baking powder and salt in medium bowl; set aside.
- Beat margarine and sugar in medium bowl with electric mixer on high speed until creamy.
- Beat in eggs until light and fluffy.
- Stir in bananas.
- Alternately add flour mixture and milk, beating well after each addition.
- Stir in 1/2 cup walnuts.
- Spread into greased 9x5 inch loaf pan.
- Sprinkle with remaining walnuts.
- Bake at 350* for 1 hour, 10 minutes or until toothpick inserted comes out clean.
- Cool in pan on wire rack 10 minutes.
- Remove from pan; cool completely on wire rack.
- Sprinkle with powdered sugar before serving, if desired.
