Cheesecake Cookies

Ingredients:

Crumbs:
6 tablespoons butter, softened
1/3 cup light brown sugar
1 cup unbleached all-purpose flour
1/2 cup finely chopped walnuts

Filling:
1/4 cup granulated sugar
8 ounces cream cheese, softened
1 egg, lightly beaten
2 tablespoons milk
2 tablespoons lemon juice
1/2 teaspoon vanilla

Directions:

For Crumbs:
  1. Preheat oven to 350° F.
  2. Cream butter and brown sugar.
  3. Add flour and nuts.
  4. Mix with hands until crumbly.
  5. Reserve 1 cup for topping.
  6. Press remainder into miniature muffin tins lined with muffin papers.
  7. Bake 12-15 minutes.
  8. Cool.
For Filling:

  1. Blend granulated sugar and cream cheese.
  2. Add egg, milk, lemon juice and vanilla.
  3. Mix well.
  4. Put about 1 teaspoon filling into each cooled muffin cup.
  5. Sprinkle with reserved crumbs.
  6. Bake at 350 ° F for 25 minutes or until knife inserted in center comes out clean.
  7. Cool.
Store in airtight container in refrigerator.
Makes Approximately 2 Dozen
