E-Z Christmas Cookies

Here's a perfect recipe for children and busy adults.
It's very simple, requires no baking and they look very festive.



Ingredients:

1/4 cup butter or margarine
12 oz. pkg. semi-sweet chocolate chips
10 oz. colored mini marshmallows
wax paper--it's a must!
*optional--6 oz. shredded coconut
*optional-1/2 cup chopped walnuts

Directions:
  1. Melt margarine in large saucepan on low heat.
  2. While margarine is melting lay a 3 sheets of wax paper-about 17" long, on the counter top.
  3. Sprinkle coconut in a thin layer across the wax paper.
  4. When margarine is melted add the package of chocolate chips--melt until smooth.
  5. Remove mixture from burner and add marshmallows and nuts.
  6. Stir so that marshmallows are well covered in chocolate.
  7. Drop 1/3 of the mixture onto a sheet of wax paper.
  8. Using your hands, shape the mixture into a sausage shape running lengthwise.
  9. Roll the mixture back and forth in the coconut until well-coated.
  10. Roll your tube up in wax paper and twist the ends of the paper together.
  11. Do the same with the remaining mixture.
  12. Place in freezer for about 1 hour.
You can leave your tubes in the freezer until you are ready to serve them. They store well over the holidays and are a good treat for surprise holiday guests.
When ready to serve, unwrap the tube and slice in 1/4-1/2" slices. Now eat!

For those of you that don't like coconut -- you can use powdered sugar in it's place--or nothing at all.
