Christmas Fruit Mince

Serve this spicy fruit mixture in pies or miniature tarts.



Ingredients:

3 cups dried currants
1 1/2 cups golden raisins
1 1/2 cups dark raisins
3/4 cup candied peel, chopped
1 pound cooking apples, peeled, cored, and finely chopped
2 1/2 cups brown sugar, firmly packed
1 teaspoon ground allspice
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
grated zest and juice of 2 lemons
3/4 cup brandy

Directions:
  1. In a large bowl, place all the ingredients and mix well to combine.
  2. Cover with plastic wrap and leave overnight.
  3. Pack the mixture into sterilized jars and close tightly.
  4. Leave in the refrigerator for 4 to 6 weeks.
  5. Stir the mixture well before using.
Prepare the mince well beforehand to ensure full flavor.
Makes about 10 cups.
