Mushroom Rice

Ingredients:

2 1/2 cups raw rice
5 cups water
1 onion, chopped
1 green bell pepper, diced
1 red bell pepper, diced
2 cloves garlic, chopped
1/2 cup celery, diced
4 cups mushrooms, sliced
1/4 cup vegetable oil
1 tablespoon sage
2 teaspoons thyme
2 teaspoons parsley
salt and black pepper

Directions:
  1. While heating oven to 350 F, saute a few minutes:
    onion, bell pepper, garlic, and celery.
  2. Add mushrooms, sage, thyme, parsley, and salt and pepper.
  3. Saute a few minutes more.
  4. Add water.
  5. Stir well and bring to a boil.
  6. Add rice.
  7. Stir well.
  8. Cover and carefully transfer to oven.
  9. Bake at 350 F for 1 hour (or until rice is done).
  10. Do not stir or uncover while cooking.
  11. Fluff rice.
Serves 6-8
