Pine Nut Caramel Crisps

Ingredients:

24 (2 1/2 inch square) regular or chocolate graham crackers
3/4 cup firmly packed brown sugar
3/4 cup margarine or butter (1 1/2 sticks of butter)
1 cup pine nuts or coarsely chopped peanuts
1 teaspoon vanilla
1 cup milk chocolate or butterscotch chips

Directions:
  1. Lay crackers side by side in single layer in baking pan.
  2. In medium saucepan, combine brown sugar, butter and pine nuts.
  3. Bring to a boil, stirring frequently.
  4. Boil 3 minutes.
  5. Remove from heat; stir in vanilla.
  6. Pour mixture over crackers; spread to coat.
  7. Sprinkle with chips.
  8. Let stand 2 minutes while chocolate chips melt then spread evenly.
  9. Cool completely.
  10. Break into pieces.
Servings: 4 dozen
