Sparkling Pineapple Punch

Ingredients:

1/2 c. sugar
1/2 c. water
2 3 inch sticks cinnamon
1/4 c. lime juice
1 46 oz. can pineapple juice (chilled)
1 liter sparkling water
1 bottle (750ml) champagne or sparkling white wine or 1 liter ginger ale (chilled)

Directions:

  1. Heat sugar, water and cinnamon to boiling; reduce heat.
  2. Cover and simmer 15 min.
  3. Cover and refrigerate at least 2 hrs or until chilled.
  4. Remove cinnamon from syrup.
  5. Just before serving, mix syrup and remaining ingredients in large punch bowl.
Makes 26 Servings
